Il mwbgmwbwlavash (mwcain armeno լավաշ?, lavaš, ; mwcgin persiano لواش‎, lavâš; mwcwin azero mwdalavaş, ; mwdgin georgiano ლავაში?, lavaši) è una sottile mwdwpiada morbida a base di farina, acqua e sale. Nel 2014 è stato inserito nella lista dei mweapatrimoni culturali immateriali dell'umanità dall'mweqUNESCO con la dicitura: "Lavash, la preparazione, il significato e l'aspetto del pane tradizionale come espressione della cultura in mwegArmenia".cite-ref-patrimoniounesco-1-0[1]

Il lavash è un tipo di pane molto comune nel mwgaCaucaso (consumato principalmente in mwgqArmeniacite-ref-lavasharmenia-2-0[2], ma anche in mwhgAzerbaigian e mwhwGeorgia), in mwiaTurchia, in mwiqIran ed in mwigAfghanistan.cite-ref-lavashking-3-0[3]cite-ref-lavashcaucaso-4-0[4]cite-ref-lavashiran-5-0[5] È anche possibile trovarlo in altri luoghi del mondo con una forte presenza della mwlwdiaspora armena, come la mwmaCaliforniacite-ref-lavashcalifornia-6-0[6], la mwnqSpagnacite-ref-lavashbarcelona-7-0[7] ed il sud della mwogFranciacite-ref-lavashmarseille-8-0[8].

Etimologia

L'origine della parola "lavash" è comune o simile in molte lingue del caucaso e dell'mwqgAsia. Oltre a "lavash" (լավաշ) in Armeno, si attestano il persiano "lavâš" (لواش), il Georgiano "lavaši" (ლავაში), il mwqwTurco e l'Azero "lavash" (lavaş), il mwraCurdo "lewash" (lewaş). In mwrqIran è anche chiamato semplicemente mwrgpane armeno (نان ارمنی).cite-ref-panearmeno-9-0[9]

L'origine piú antica sembra essere mwtasemitica per confronto con l'mwtqaramaico samaritano lwš (ࠋࠅࠔ, impasto), l'mwtgaramaico layšā (לֵישָׁא, anch'esso con il significato di impasto) e, in ultima analisi, il proto-semitico *lawaṯ- (impastare).cite-ref-etimo1-10-0[10]cite-ref-etimo2-11-0[11]cite-ref-etimo3-12-0[12]

Preparazione, uso e conservazione

Il lavash è di forma quadrata o rettangolare o circolare e può essere sottile un millimetro e lungo quasi un metro. È un prodotto morbido quando è fresco, mentre quando indurisce diventa più croccante.

È possibile conservare alcuni tipi di lavash in forma secca per settimane o addirittura mesi. Questo tipo di pane era infatti utile durante marce militari, viaggi e per i pastori che conducevano una vita nomade. Il lavash secco può essere reso pronto da mangiare inumidendolo leggermente. Può essere mangiato solo o con formaggio piegato, zuppe, panna,mwzwburro o mwaakhorovats.

Tradizionalmente viene arrotolato, appiattito e poi cotto, appoggiandolo contro le pareti calde di un forno di mwagterracotta chiamato tonir (թոնիր) in Armeno o tondir (təndir) in Azero.

Il lavash ha anche un importante ruolo nella mwbaliturgia armena che lo usa per l'mwbqeucaristia.cite-ref-lavasheucarestia-13-0[13]

Tradizionalmente, in Armenia, gli sposi ricevono dalla mamma della sposa lavash e mwcwmiele, come augurio di prosperità.cite-ref-lavashmatrimonio-14-0[14]

Controversie

Quando il lavash è stato inserito nella lista dei patrimoni immateriali dell'umanità da parte dell'UNESCO, è stato attribuito esclusivamente all'Armenia.
